Enchilada Casserole (frozen, serves 2-3)

Chicken version includes pasture-raised chicken, heirloom beans, cheese, salsa roja, layered with corn tortillas. Veggie version includes heirloom beans from Rio Del Rey, Spanish rice, carrot, kale, cheese, salsa roja layered with fresh corn tortillas. Enchiladas will keep well in your freezer for 3-6 months.
