Hand-made Agnolotti Dinner (for 2-3)

Agnolotti are similar to ravioli, little pouches of fresh house-made pasta filled with ricotta, spinach, mushroom, and herbs. We top the agnolotti with a silky butternut sauce and serve with a side of cooked seasonal vegetable and a nice green salad.  This meal pairs nicely with a bottle of wine and good company. NOTE: the "Chicken" option includes 1 lb of cooked pasture-raised chicken, so there is enough food to plate 3 sensible servings. The "Veggie" option includes enough food for 2 sensible servings.
